Traybake with Chicken, Potatoes, Lemon and Wild Garlic Butter

An easy traybake packed with flavour. Chicken, lemon and wild garlic butter are a wonderful combination.

I use organic potatoes with their skins left on.

Make the butter using my Wild Garlic Butter recipe. If you don't have any wild garlic, you can use fresh chives, or a mixture of chives and parsley instead. Add a crushed clove of garlic to give the butter that lovely garlicky flavour.

Make sure the butter is soft and at room temperature so it's easy to spread over the chicken.

This recipe makes a generous amount – perfect for hungry appetites, an extra guest or leftovers. If you're cooking for fewer people, simply use drumsticks instead of both drumsticks and wings.

Tip: You can also roast a whole chicken with wild garlic butter. The easiest way is to butterfly the chicken first, which helps it cook more quickly and evenly. There are plenty of helpful videos online if you've never done it before.

  • Ingrediënts

    • 800g organic floury potatoes
    • 4 organic chicken drumsticks
    • 4 organic chicken wings
    • 1 organic lemon
    • About 100g soft wild garlic butter, at room temperature
    • Olive oil
    • Sea salt and freshly ground black pepper

  • Method

    Preheat the oven to 180°C.

    Scrub the potatoes clean and cut them into wedges. Parboil them for a few minutes, just until they begin to soften. Drain well and leave them to steam dry in the pan with the lid on.
    Scrub the lemon and cut it into wedges.
    Rub the drumsticks and chicken wings generously with the softened wild garlic butter.

    Drizzle a little olive oil into a large roasting dish. The more space everything has, the better it will roast and brown. Spread the potato wedges across the base of the dish and season with sea salt and freshly ground black pepper. Arrange the chicken between the potatoes and tuck the lemon wedges in around them.

    Roast for about 45 minutes, until the chicken is cooked through and everything is beautifully golden.
